Chef Talks

Chef Talks is an interview-led food series imagined, hosted and edited by Mallory Legg for The Handbook News, designed to bridge the gap between diners and the chefs shaping London’s restaurant scene.

Built around a shared dish, each episode invites chefs to cook something personal to them — often a plate tied to memory, identity, or the passion behind their work. Rather than a traditional interview, the format creates a more relaxed and intimate conversation, where cooking and eating together allow chefs to open up in a natural, unguarded way.

The series has featured some of the industry’s most respected names, including Yannick Alléno, Jamie Oliver, Simon Rogan, Michel Roux, and Mario Carbone, exploring topics ranging from legacy and creativity to farming, mentorship and the realities of modern hospitality.

At its core, Chef Talks uses food as a way to tell deeper human stories — bringing audiences inside the kitchens, personalities and philosophies behind some of the world’s most influential restaurants.
